Cheesy Zucchini


4 Medium zucchini, cut in slices

4 Tablespoons chopped fresh basil

2 Tablespoons thinly sliced green onion

1/2 Chopped onion

1/2 Tsp. dried thyme

3/4 Tsp. garlic powder

1 Cup grated Monterey cheese

1/2 Cup coarsely grated Parmesan, plus a little more for the top if desired

Salt and fresh ground black pepper to taste

Cooking oil


Sautee the onion in a skillet. Add zucchini and cook until tender. Season with salt, pepper, garlic powder, thyme, add cheeses and allow to melt. Finish it with green onion, basil, and the rest of the parmesan cheese. Enjoy.
